I’m not really an advocate of carb-free diets, but I do find that as a person who shies away from meat that its easy to overload on starches. That’s why when a client gave me the recipe for this “rice” made of cauliflower I was keen to try it out.
Now, I do most of the cooking in our household, but the two things I never make are omelets and this cauliflower rice. Its simply because they require something I don’t have: patience. Anything which requires watching usually just ends up as broken egg and uncooked bits of cauliflower. So, Ben does both of these dishes brilliantly and has made quite an art of them.
First he blends the cauliflower (sans stem) in the food processor.
Then he pan fries it on medium heat, flipping the ground cauliflower seldomly. Sometimes he adds a diced onion in which gives it a wonderful flavor with also some added texture. You can probably get creative and add beans or peas – whatever you would make with rice. The options are endless!
Now, we like it a bit browned, but have also done it less cooked so its pure white which really mimics rice. You know that its ready to eat when the cauliflower granules shrink a bit as its water evaporates. The total cooking time is around 15 minutes – around 7 or 8 minutes on each side.
This dish is great as a general side for just about anything. Its a formidable replacement when serving curries too. Even for those of you (like Ben) who aren’t looking to avoid carbaholicdom (he’s pretty comfortable with his high cookie consumption) its a nice change from rice and takes way less time to prepare!
